Yummy...Rachael Ray eat your heart out! I did this meal in 20 minutes. It was healthy, delicious, budget friendly and easy! In my book, that makes it the perfect meal. John says we should call it "RustCan pasta". A combination of Rustic and Tuscan...but it was partly "canned" too! Half a small onion chopped, 5 slices of bacon chopped. One package of baby spinach. Add the can of white northern beans, drained and rinsed. Add one can crushed fire roasted tomatoes. Simmer...season with minced garlic, black pepper, red pepper flakes and a bit of sugar. Add a 1/2 cup of the pasta water to the sauce. You must have cheese please! Almost finished... There you go! A cute kitchen helper is a must!! Quick and easy dinners mean more time for this!
Somedays I feel like I've done it all. To look at me, you might say "now that's an ordinary mom".
